What does the name Eunice mean?

Eunice comes from the Greek Euníkē, made of eu-, "good, well", and níkē, "victory". In the New Testament Eunice is the mother of Timothy, praised with her mother Lois for her faith (2 Timothy 1:5). Like many biblical names, it was taken up by English-speaking Protestants after the Reformation and was common in 19th-century America. In English it is said YOO-nis, not in the Greek way.
